100% Bourbon Cask Soft Yellow/Lemon. It opens on barley water and lemon juice and a sweet note of lemon meringues.It’s cool on the olfactory senses, no aggression at all which is unique for a spirit so young. Its fragrant floral blossoms intermingle beautifully with the citrus flavours exciting the taste buds. Also to be found are little notes of ester sweet pineapple. It’s on the palate that the malted barley really emerges. It’s crisp and sweet almost like toasted Rye bread, buttery popcorn and the fresh oak bourbon flavours merge into the mix strong and mellow adding structure and weight to the overall experience. All the components are absolutely as good as we can find as distillers, and it’s so rewarding to see the evolution of this thoroughbred youngster. This is what we strive to achieve using all our experience as a team to make by hand a single malt that cannot be criticised by anyone, distiller or critic alike.
